Muskrat Jamboree

We thought this sign was awesome.
The Muskrat Jamboree is held on the Ice Road. Here you can see some tents set up. People were selling food at these tents. Shane bought chili and an eskimo doughnut. The doughnut is in his pocket.I hope this video works. It is the beginning of the dog sled race.



This picture of the babies isn't on the ice. It is taken on my driveway. Because it has been so warm out lately we have been able to go outide to play more. As you can see on Caleb's face, they just love playing outside!
I am not sure if you can see very well in this picture or not, but it is the Northern Lights. The camera doesn't really capture it that well. I was standing on my porch when I took this picture. The Lights were so pretty Saturday night. They were just dancing all over! You probably can't tell, but there was even a little pink in the Lights.

Babysitting

Last week one of Shane's coworkers needed me to babysit his daughters for the afternoon. Their names are Shulaya and Lakiesha...identical twins. I decided to take a picture of them with the babies cause who knows when I will be babysitting two sets of twins at one time again!

The Lord is so good, too. I have been thinking about the summer and what I will do. I stop babysitting the twins once school is out and therefore no longer will be making money to help out with the bills. I have been praying that the Lord will open something up for me. Then yesterday Shane said that Kevin (the girls' dad) asked if I would babysit the girls Monday-Friday 8-5 once school is let out. I was so excited to hear that! So I will be spending my summer with Shulaya and Lakiesha. Not only that but I will be babysitting my nephew, Caleb, for half of May along with the twins. God is just giving me more and more babysitting jobs. I am so thankful!

Shane and I got to go on a good walk yesterday. The weather has been so nice lately! It's like -20 in the morning but gets up to -5 or so in the afternoon and evening. The sun stays up until after 9, too, so that helps keep things warmer. Anyway...we walked yesterday from 8-9 pm. Part of our walk was along the Mackenzie Rive which is right now the ice road. The part we walked by is getting set up for the Muskrat Jamboree which is this coming weekend. They will set up a whole carnival on the ice. It will be fun to go to. There are carnival games and such along with contests like snow show racing, dogracing, snowmobile races, and all sorts of other stuff.

Mother Daughter Banquet

This past Saturday we had our mother daughter banquet. They have it earlier in the year because the ladies from Aklavik and Tuk can only come if the ice road is still open. Our church hosted the banquet and Aklavik ran the program. It was a great time. I was on the decorating committee. Thursday night we set up all the chairs and tables and place settings and all that then on Friday night we put fresh flowers in vases and put them all over the room. The theme was In The Garden and you really felt like you were in a garden. It was really pretty. I had a super good time at the dinner. We had 63 ladies there. It was great!

This coming Thursday Shane and I are going to Aklavik with our Pastor. Shane is going to be preaching. I have never been to the church in Aklavik so I am looking forward to it. Afterwards we are going to the Noland's house (the missionaries there) to fellowship and eat and stuff. It will be a good time. Mrs Noland is already a good gluten free cook.

Well, I am not sure of what else to post...Leam was just eating a baked potato with butter and cheese and I sang the moon song to the babies.

Homemade Pierogies

I decided to attempt to make home made pierogies. I found a good gluten free recipe online and it looked really easy. I decided to make them gluteny first, though, cause if they were gross I didn't want to waste gluten free flour. So last night I made them for Shane. I started at 6:15 and was finally finished them at 8:00. They took forever to make!! I think that next time they will be quicker, though, cause I know what to do now.

Yes, that's right...next time. Shane said they were pretty yummy so I will make them again. The only thing he said that I need to change is the size. They were about 3x the size of normal pierogies. I had no idea they would come out that big!! So anyway...here's the recipe for anyone who wants it:

Let's see if I can remember everything...

1+1/4 cup rice flour
1/2 cup potato flour
1/4 tapioca flour (I think...it might be a different type of flour)
at least 2 tbsp xantham gum
2 tbsp oil
1+ 1/2 cup water
1 tsp salt

Sift the dry ingredients (but I didn't do that...hehe)
Add the oil and water, stir pretty good then let it sit in the frig for a half hour or so (I only did for 28 minutes. )
Add extra flour to the dough until it is not too runny. You just gotta add flour until you think it's good. It shouldn't be tooooo dry. The recipe said you might have to add more xantham gum if its not sticking together well enough.

Roll out the dough on a floured surface. It is really important that there is enough flour on your surface cause it sticks real easy. Make it about 1/4 inch thick or so then use a cup to cut out circle shapes in it. Pull the circles up and fill them with your yummy fillings (I used mashed potatoes and cheese).

Fill a pot with water and let it come to a boil. Then put the stuffed pierogies in and keep them in until they begin to float. Then take them out and fry them in butter until they are the color you like.

Like I said...haven't tried them gluten free yet but Shane says gluteny is good (for gluten I just used 2 cups all purpose flour instead of the 3 types of flour and I used no Xantham gum.)

So go ahead and try it and let me know how it tastes. Anna Davis will reward the best tasting pierogie cooker. hehe.

Old Folks Home

Well, Shane and I are watching the old folk's home for the next two weeks. It's like an apartment but only old people live there and they have activity people who work there I think. I am not really sure. Anyway...we are living there for the next two weeks. We are excited because it is right in the center of town. We can walk to church, Shane's parents' house, the store...places like that. They are all less than a ten minute walk away.

Another person has asked me to teach them guitar. I am looking forward to the challenge cause this person is left handed. She wants to find a left handed guitar before we start lessons but I think I might want to start her on the recorder or a bit of piano first just so she can learn to read music before she starts playing the guitar. It will probably make things easier. So that will be fun to do!
